Mediterranean Salad with Red Potatoes

As from today, we'll give you some lovely, tempting vegan & vegetarian recipes. Your vegetarian and/or vegan guests will love you for it!
Take the challenge and prepare these dishes!
In the next few days, we will give you more recipes; today the first one. (side dish, serves 12)

Ingredients:

  • 2 kg  red potatoes
  • 1/4 cup fresh-squeezed lemon juice
  • 1/4 cup olive oil
  • 1/4 cup Italian parsley, chopped
  • 3 cloves garlic, chopped 
  • (sea salt to taste)

Preparation:

Boil the potatoes for 15 to 20 minutes and allow them to cool. Peel and cube them. Mix all the ingredients and pour over potato cubes. Mix well.
