Rolled Turkey / walnuts
Today, the first of a series of recipes with turkey! Yes, we know.... Christmas is over. But just try these recipes and you'll agree that turkey isn't just for the holiday season!
Serves: 4
Ingredients
- 100g/4oz
minced turkey
- 300g/11oz
ready-prepared spinach
- 1
egg
- 50g/2oz
chopped walnuts
- 8
escalopes of turkey breast
- (Salt),
black pepper, freshly ground
- 2
tbsp olive oil
- 2
wineglasses dry white wine
- 250g/9oz
Pecorino cheese, thinly sliced

Steamed
vegetables to serve
Preparation
- Cook
the spinach until wilted, squeeze out the moisture and chop finely.
- Combine
with the turkeymince, chopped walnuts and egg.
- Season
with black pepper and - if desired - salt. Preheat the oven to 200°C./400°F,
Gas range 6.
- Flatten
the turkey escalopes by gently pounding them and spread with the spinach
mixture. Put Pecorino slices on top and roll up the escalopes and tie them with
string. Put the turkey rolls in a lightly oiled baking dish and roast them for
10 minutes.
- Remove
the turkey rolls from the oven, turn them over and pour over the wine. Return
to the oven and cook until the wine has evaporated.
- Slice
the turkey rolls, arrange on warm plates and serve immediately with a selection
of steamed vegetables.
