Easy ONE-POT SUPPERS: Potato Pan-fry

This dish is originally made with chorizo (a large, spicy Spanish sausage). This will add a smoky flavour to this colourful supper. But if you're a vegetarian, you can swap this for smoked tofu or for smoked cheese, or just add cashew nuts at the very last moment.

The combination of these ingredients is excellent: smoky flavour with crispy paprika potatoes and sweety juicy cherry tomatoes.

Ingredients

  • 2 tbsp olive oil
  • 450g (1lb) potatoes, cut into 2,5cm (1in) cubes
  • 2 red onions, sliced
  • 1 level tsp paprika
  • 300g (11 oz) piece of chorizo sausage, skinned and cut into chunky slices (or swap for one of the other ingredients as suggested above; if you choose the smoked tofu or smoked cheese: cut into cubes, or if you choose the cashew nuts: have a handful of nuts ready)
  • 250g pack cherry tomatoes
  • 100ml (3½ fl oz) dry sherry
  • 2 tbsp freshly chopped flat-leafed parsley

Preparation

  • Heat the oil in a large, heavy-based frying pan. Add the potatoes and fry for 7-10 minutes until lightly browned, turning regularly.
  • Reduce the heat, add the onions and continue to cook for 10 minutes, stirring from time to time until they have softened but not browned.
  • Add the paprika and chorizo sausage (or smoked tofu) and cook for 5 minutes, stirring from time to time.
  • Add the cherry tomatoes and pour in the dry sherry. toss everyting together (and if you choose the smoked cheese: add it now and stir well) until the sherry has reduced down and the tomatoes have softened and warmed through.
  • Remove from the heat.
  • (If you choose only cashew nuts instead of chorizo or cheese: sprinkle a handful of them in the dish and stir)
  • Sprinkle parsley over the top and serve.
