Easy ONE-POT SUPPERS: Prawn and paksoi stir-fry

This dish is very easy to prepare, it's ready and on the table in 20 minutes!

Preparation time: 10 minutes
Cooking time: 5 minutes, plus 4 min. standing.
340 calories (kcal), 6g fat and 50g carbohydrate per serving
Serves: 4

Ingredients

  • 250g pack medium egg noodles
  • 1tbsp stir-fry oil or sesame oil
  • 1 garlic clove, sliced
  • 1 level tsp freshly grated ginger
  • 1 bunch spring onions, trimmed and cut into four
  • 250g pack frozen raw peeled tiger prawns, defrosted
  • 200g paksoi, leaves removed and the white base cut into thick slices
  • 160g jar chinese yellow beans
  • stir-fry sauce

Preparation

  • Put the noodles in a bowl, pour over 2 litres (3½ pints) of boiling water and leave to soak for 4 min. Drain and set aside.
  • Heat the oil in a wok, add the garlic and grated ginger and stir-fry for 30 sec. Add the spring onions and prawns and cook for 2 min.
  • Add the chopped white part of the paksoi and the jar of sauce. Fill the empty sauce jar with boiling water from the kettle and pour this into the wok, too.
  • Add the noodles to the pan and continue to cook for 1 min, tossing every now and then to heat through. Finally, stir in the green paksoi leaves and serve.
