Easy ONE-POT SUPPERS: Smoked Cod and Sweetcorn Chowder

Fish, potatoes, (pancetta), leeks and sweetcorn combine in a wonderfully creamy broth. Smoked cod loin has a lovely flavour and is a good thick, chunky cut.

Ingredients

  • 130 pack Cubetti di Pancetta
  • 50g (2 oz) butter
  • 3 leeks - about 450g (1lb) - trimmed and thinly sliced
  • 25g (1 oz) plain flour
  • 568ml carton milk
  • 700g 1½ lb) undyed smoked cod loin or haddock, skinned and cut into 2 cm (¾ in) cubes
  • 326g can sweetcorn in water, drained
  • 450g (1lb) small new potatoes, sliced
  • 142ml carton double cream
  • ½ level tsp paprika
  • 2 tbsp freshly chopped flat-leafed parsley

Preparation

  • Fry the pancetta in a large pan, until the fat runs ou. Add the butter to the pan to melt, then add the leeks and cook until softened.
  • Stir in the flour and cook for a few seconds. Pour in the milk and 300 ml (½ pint) water.
  • Add the smoked cod or haddock to the pan with the sweetcorn and potatoes. Bring to the boil and simmer for 10-15 min, until the potatoes are cooked.
  • Stir in the cream, season with salt and freshly ground black pepper and the paprika and cook for 2-3 min to warm through. Ladle into wide shallow bowls and sprinkle each with a little chopped parsley.
