Vegetarian and vegan tips

Did you know that not all chocolates are vegetarian? Some chocolates are made with non-vegetarian emulsifiers or whey. If you want to make sure you are dealing with vegetarian chocolate, go for vegetarian brands like Divine of Green & Black's.

Ready-made mince pies and mincemeat sometimes contain vegetarian suet, but by far not all brands do.

If you have vegetarian guests (or if you're a vegetarian yourself!), and want to avoid beef suet, look out for the symbol of the Vegetarian Society on packs. For more information and a full list of approved products, you can go to veg.soc.org.

If you have vegan guests, you will need to avoid using any animal products and this includes eggs, honey, gelatine, animal milk and meat.

Pinenut Stuffed Peppers and Roasted Tomato

Ingredients

  • 1 large red pepper: leave the stalk on and slice pepper in halves along its length, including the stalk; deseed the pepper halves
  • 12 very small cherry tomatoes
  • 1 tbsp pinenuts,
  • sprig of thyme
  • ½ clove garlic, thinly sliced
  • 2 olives, chopped
  • 1tbsp breadcrumbs
  • 1tbsp olive oil

Preparation

  • Preheat the oven to 200°C (or 180°C for fan oven)
  • Put pepper on a roasting sheet
  • Fill each half with 6 cherry tomatoes (or as many as you can get in), pinenuts, thyme leaves, garlic and olives.
  • Season if desired and sprinkle with breadcrumbs.
  • Drizzle over the olive oil.
  • Roast until tender; about 40-45 minutes.
